HYDROXYTYROSOL & THE DESERT Naturally rich in Polyphenols, particularly Hydroxytyrosol Because of the harsh environment of the desert (127F during summer, rocky soil, roots cannot develop easily, lack of water), the olive trees are so stressed that a phenomenon of panic (survival instinct) occurs. This causes the olive trees to produce a huge quantity of polyphenols (antioxidants) to survive. The resulting olive oil contains an extraordinary hydroxytyrosol value.
