Bischel 2018 Appenheimer Frühburgunder dry is an organic wine since 2012, certified since 2023. It undergoes spontaneous fermentation in stainless steel with 10% new oak, aged for 18 months. This aromatic wine has a lean and long crushed-gravel line with hints of thyme and tarragon. Despite being five years old, it tastes very young, with wild strawberries and super-tart but appetising acidity. Tamlyn Currin, a wine writer for Jancis Robinson, notes that it has a delicate velvety fruitiness, fine spicy tannin structure and a very long finish. The wine is described as having a lovely steel-knocker of minerality on the end.
