Meticulous attention to the harvesting of our olives Hand-harvesting of koroneiki olives in Crete We are meticulous about how our olive oil is produced. The quality of an olive oil is very much affected not only by how the olives are grown - but also how they are harvested. Our olive oil is made from olives grown in our own organic private olive groves in northern Crete. The olives are hand harvested olives early in the season in October and November. This method of harvesting ensures that the olives are collected in pristine condition, without damage, and with careful inspection of each olive as it is added to the baskets. The olives are then taken immediately to the factory for pressing.
