Da Mhile Organic Single Malt Whisky is the foundation of the business, aged in previously used barrels; ex European fortified wine barrels for malt and ex bourbon barrels for grain. They currently release around two casks a year, making availability limited and always in demand. On the nose, it has notes of membrillo, oily orange peel, toffee, and stone fruits. On the palate, it offers fruit cake, nutmeg, and tropical elements, with a hint of pepper. The finish is sweet, with raisins lingering.
