La Bio Idea Organic Whole Wheat Fusilli is made from durum wheat, slow dried at low temperature by a family pasta maker (Fattoria Barbagallo) at the base of Mount Etna in Sicily. Professional skills are needed to make good pasta, as not only does it require the right ingredients, but in the right proportions, with high-quality durum wheat, correct grinding & preparation of the dough. This meticulous approach gives the pasta the right shape and is what distinguishes La Bio Idea pasta from many other pastas, including organic variations.
