Buckwheat is believed to have been first cultivated more than 8,000 years ago in Southeast Asia. It was one of the first crops introduced to North America by early European settlers and it's a staple food in much of Eastern Europe.
Despite its name, buckwheat has nothing to do with wheat: it's a cereal. Our organic buckwheat flour, milled from this nutritious plant that's part of the rhubarb family, is an excellent alternative to regular wheat flour. Buckwheat’s nutritional value is head and shoulders above that of many other grains, with high levels of protein and fibre.
Buckwheat flour can be used for many of the same purposes as wheat flour, such as baking and pancakes (blinis and galettes in particular – we like ours with scrambled eggs and smoked salmon), although it's often used in combination with other flours as its intense nutty, earthy flavour is best when it's slightly on the subtle side.
