Our organic extra virgin olive oil from the cornicabra variety, originating in the Montes de Toledo, comes from sustainably grown olive trees, without pesticides or chemicals, respecting the natural environment and local biodiversity. Made exclusively from early harvest olives, this EVOO is cold-pressed without pits, a rare process that makes all the difference. By removing the pits before milling, we obtain a more stable oil that is smooth and elegant on the palate, free of the bitter notes that the pits impart. This enhances the aroma and flavour of the pulp, offering a cleaner, fruitier profile. Its high polyphenol content reinforces its health benefits, protecting cells from oxidative damage and offering cardiovascular, anti-inflammatory and neuroprotective benefits.
