This organic Japanese styled miso has been fermented for at least 3 years, and includes 5 varieties of seaweeds, (nori, dulse, kombu, alaria and kelp), 3 varieties of organic mushrooms (shitake, reishi and maitake), and herbs and spices that lend an oriental taste and flavor of the sea. Japanese style miso has functional qualities superior to any other miso. It has been produced according to an ancient traditional process using the highest quality organic certified ingredients. Some of the key steps in producing miso, sometimes forgotten or set aside by modern producers, are major components in our production process for providing top quality misos unique in the texture and rich taste they develop over time.
