Shizenshu Nigori is a pure nigori sake from the Shizenshu brand, made with organic rice, additive-free yeast, and using the traditional kimotozukuri method for fermentation. This sake was brewed like the old days, mashing the fermenting mass with a stone mortar. It has an intense koji aroma, a rich taste, and a smooth texture. The acidity typical of the kimotozukuri method is noticeable in the aftertaste. The sake has delicately sweet aromas of rice pudding, banana, and Greek yoghurt, with a thick and rich texture of rice cream and a drying spicy finish. It is best served well chilled (4-8 °C) and can be enjoyed with ice or mixed.
